Their owner authorized the low prices on the premise that they need to work on the fan experience. The menu is called the "Fan First Menu Pricing." Here are the items:
-$2 items: refillable pop, hot dog, popcorn, water, pretzel
-$3 items: nachos w cheese, pizza slice, waffle fries
-$4: souvenir refillable pop
-$5 items: beer, cheeseburger
-$6 chicken tenders with fries

I get that sports, whether it is college or professional, are all about profits but you don't always get your highest profits from high pricing. In light of decreased demand for tickets across the board, something that we can relate to here with the Gophers, if Coyle is truly genuine in wanting to get people in the stadium and improve the experience, then look at something like this.

I still hear from countless people that they would rather sit in front the HD TV with a bowl of popcorn than spend $120 on tickets for their family and another $60 on food and drinks. Reduce concessions to literally be at cost if you really want people in the door, let the increase in ticket sales offset the loss in concession profits, and then see if it is worth it and if attendance slowly trickles up.
