Rules Question on Pick plays

I admit I don't know the specifics of what is an illegal pick play in FB, but based on my observation of the title game, if the two TDs Clemson scored on "pick plays" are legal, how can anyone play Man D in goal line situations? There was no time to switch and the dbacks would have just about have to have lined up vertically to avoid being Picked.
